Easy Roasted Chicken with Sweet Potatoes and Heirloom Carrots

 

Chicky chicky chicken!! I love chicken, it is truly one protein I eat the most. I love it grilled, baked, broiled, BBQed, roasted, marinated, whole, shredded, ground..you get the picture I’m sure. Chicken is the one meat I’m not sure I could ever give up. I have 1000000s of recipes from all over the world I have made and created. I believe if you are a chicken lover then you should always have some easy chicken, one pot go to meals in your head.

Being a country girl from Idaho I love me a potato but I also know the value of eatting the rainbow and nutrient rich foods. This chicken is baked in a Dutch Oven with russet and sweet potatoes, then for more color I added purple heirloom carrots, onions, herbs and always fresh garlic.

 

 

Lets do this!

 

Ms Foodies Roasted Chicken with Sweet Potatoes 

1 Whole Chicken

5-8 Purple or any Carrots you’d like

3-4 Sweet Potatoes

4-7 Russet Potatoes depending on size

2 Yellow or Sweet Onions

Fresh Thyme, Garlic and Parsley

Hymalian Salt and Fresh Cracked Pepper

Butter for browning the top

Dutch Oven

Preheat oven to 400, you will turn down the heat 2xs

I like to shove a whole head of garlic, 1 onion and a bunch of thyme inside my chicken. Then Truss chicken with bakers twine. It really permeates the flavor through the whole bird.

Next add sliced potatoes, onions and s-n-p on top…pretty!

 

As onions cook down with chicken fat, it makes a nice au jus. Add fresh thyme, butter and other herbs if using…I forgot the parsley this trip lol

Pop that in the oven covered…TURN DOWN HEAT TO 350

after 30 minutes add sweet potatoes and carrots

TURN DOWN OVEN TO 300

Cover again and bake for 30 more minutes

 

 

Poke with a fork to see if veggies are done…

Love how the purple carrots look and yes they stain EVERYTHING purple.

The skin on the leg has shrunk, it now looks French cut…remove chicken so it does not over bake. You could remove lid last 15 minutes of bake time and baste your chicken to brown. I was lazy and gave the poor drooling dog my chicken skin! He said yummy

Just makes me drool…too

You can never go wrong with easy comfort food, that is colorful, luscious, pretty cheap eats and yummy!!
